There are restaurants, and then there are restaurants built around a philosophy of fire. At Orilla Bar & Grill, every dish that leaves our kitchen carries with it the story of how it was cooked — and at the center of that story is one remarkable piece of equipment: the Josper grill.
The Josper was born in 1969 in Spain. The result was something entirely new: a closed-combustion unit that operates on 100% natural charcoal, reaches temperatures between 300°C and 350°C, and cooks most proteins in as little as three to ten minutes. Unlike a conventional grill, the Josper is enclosed — the heat surrounds the food from all directions.
When food is placed inside the Josper, the intense heat immediately seals the surface of the protein, locking in every natural juice and flavor. The exterior develops a rich, even crust while the interior remains tender and succulent.
