Some chefs cook food. Fernando Trocca tells stories with it.
Born and raised in Argentina, Fernando's relationship with the kitchen began in his grandmother's home, where the rhythms of Argentine home cooking shaped the sensibility he would carry throughout his career.
After formal culinary training, Fernando worked alongside Francis Mallmann — the legendary Argentine chef whose mastery of live-fire cooking became a global touchstone. He then spent years refining his craft in Europe's most demanding professional kitchens.
At just 22, Fernando opened his first restaurant. His move to New York placed him at the helm of Vandam, introducing his blend of South American warmth to one of the world's most discerning dining cities.
Back in Buenos Aires, he built Sucre — one of the most celebrated restaurants in Latin America, earning a place on the Latin America's 50 Best Restaurants list for over a decade. He co-founded Mostrador Santa Teresita in José Ignacio, Uruguay, a seasonal pilgrimage for food lovers.
The City of Buenos Aires honored Fernando as an Outstanding Cultural Personality — acknowledging his contribution to Argentine cuisine and culture.
Now, Chef Trocca brings his vision to Miami Beach at Orilla Bar & Grill, honoring Argentine fire-cooking traditions centered on the Josper charcoal grill, while embracing South Florida's ingredients and energy.
